Inspiring Conversations with Allie Schaffer of Allie Cakes

Today we’d like to introduce you to Allie  Schaffer.

Hi Allie, can you start by introducing yourself? We’d love to learn more about how you got to where you are today.
My dream of baking began when I was in second grade. I loved watching baking shows and knew that I wanted to become a baker. At that time, I was mainly baking cupcakes for my family. Slowly, I expanded into cakes. When I was a freshman in high school, I made my first wedding cake for my cousin. At that point, I knew I wanted to expand my knowledge of baking. When I graduated high school, I enrolled in Auguste Escoffier School of Culinary Arts. I am in my second year and will graduate with my Associate’s Degree in Baking and Pastry Arts in May.

After starting culinary school, I thought it would be a great time to establish and start to grow my business. I currently run Allie Cakes, a home bakery that specializes in custom cakes, cupcakes, and decorated sugar cookies. Running my own business has allowed me to make other people happy through my desserts. I just celebrated my 1 year anniversary of opening my business and plan to expand into a storefront in the next few years.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It definitely has not been a smooth road. Starting up a business has been a lot of hard work. You have to have a product that customers will buy. Since I don’t have a storefront, I use social media for advertising. I am blessed to have amazing family and friends who recommend me.

Through it all, I have never given up. I give everything my best effort because I enjoy doing this. Running my business makes me so happy and I could never imagine doing anything else.

Allie Cakes is a home bakery located in Land O Lakes, Florida that specializes in custom cakes, cupcakes, and decorated sugar cookies.

I am a very creative person and I carry that throughout the desserts that I make. All of my desserts are very bright and happy, just like me. I like to use lots of bright colors, designs, and especially sprinkles. Sprinkles are my favorite!

Any big plans?
I just finished competing at Dessert Wars in Tampa where I placed in the Top 25 for Judge’s Choice. After I graduate in May, I plan to expand my business and hope to grow into a storefront.
