Hi Tom, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Our bakery is a result of a shared passion between myself and my wife Radka. A love of scratch-baking and the kind of neighborhood bakery experience we found during our travels drove to us to bring that warm, artisan-feel to Cape Coral. From the beginning, the mission was to do things a little differently: focus on handcrafted baked goods, small batches, high quality ingredients, respect for the recipe and the craft. Our Bread, Viennoiserie, Dessert bar selections are all made from scratch. We selected our current location so that the bakery would be accessible to the community, with a relaxed, inviting atmosphere where people can stop in, smell the baked delights being prepared only steps away, hear the crunch, taste the difference, all in between running errands, or just sitting down with a friend. As the business matures, we (the team) constantly work on what we stand for: authenticity, craft, no shortcuts. Every loaf, pastry and dessert is treated with care. The ingredient sourcing is intentional – high-quality, and supporting the final product’s flavor and aroma is key. In terms of where we are today: we’ve established a strong presence on Cape Coral’s bakery scene and we have been recognized by the readership of a local newspaper as makers of the best desserts in the Cape. We’ve kept to our artisan roots (small batches, crafted in house) while offering a wide selection – from crusty sourdough breads to elegant desserts like éclairs, cakes, and rotating pastry selections. Our Choux pastries are a particular favorite among our patrons. We’ve also made a promise to our customers and to ourselves about the experience: you should feel the difference when you bite into our treats. We want customers to share the love and passion, gift the treats, or enjoy them themselves.
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back would you say it’s been easy or smooth in retrospect?
With Florida being a strongly pro-business state, it was not particularly difficult to formally start up the business. Naturally, we encountered some hurdles – Hurricane Milton’s approach to SW Florida in 2024 delayed our opening by about two weeks. Once we had a well-coordinated team ready for production and smiling for our patrons, we were ready to delight Cape Coral with various treats originating from across the many baking traditions of the world. At the moment, our bakery faces the same challenges that other market niche businesses at selling at a premium price point currently face – consumer reticence and rising input costs due to tariffs, particularly on quality ingredients sourced in Europe. Admittedly, the macroeconomic situation is generally not favorable to Main Street start-ups that are not affiliated with larger corporate chains, and we perceive the effects of significantly reduced seasonal resident numbers and tourism decline in SW Florida. We are determined to power through these difficulties as we can fall back on passion and a dedication to quality, which many of our regulars appreciate. We just celebrated our first anniversary with many of our regular customers, as well as new ones that found their way into our bakery, on November 15th, and that certainly recharged our enthusiasm for the upcoming season.
We’ve been impressed with Maddie’s Artisanal Bakery, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
At Maddie’s Artisanal Bakery, we hand-craft breads, viennoiserie and elegant desserts in small batches right here in Cape Coral. From crusty sourdoughs and hearty whole-grain loaves to weekly rotating treats like éclairs and kolaches, and we constantly strive to expand our product lines. We stand apart because everything is made from scratch, with premium, carefully sourced ingredients, and no shortcuts — the recipe, the rise, the bake, each matter deeply. What we’re most proud of is the warm, inviting neighborhood-bakery feel that meets the precision and artistry of a dessert bar. Whether you’re popping in for a loaf, a cookie, or a custom cake, we want your experience to be memorable: the aroma, the crunch, the taste — all built on passion and care. Do you have any advice for those just starting out?
Aspiring bakers who are eager to break out on their own have a unique advantage in Florida, since they may produce a wide variety of baked goods in the comfort of their home kitchen under the Florida Cottage Food Law, and dip their toes in. That way, newcomers to the scene can truly hone their craft in the production of two or three product lines and build a small, but loyal, customer base before they take the plunge into the world of small business ownership. Personally, I believe that the future of baking lies in urban baker’s collectives and similar cooperative efforts on a smaller scale, because those can guarantee locally appreciated whole-food approaches and a level of quality that so many people seek.
