Today we’d like to introduce you to Olivia Pollard
Hi Olivia, so excited to have you with us today. What can you tell us about your story?
During college, I knew I wanted to have some business of my own. I was searching for something that I would enjoy doing every day and something I would be passionate about. I was scrolling through my phone, and I saw a picture of a mobile bar. I thought it would be something that I would enjoy and could be creative with. That night I started researching mobile bars, the laws, and where I could find a mobile bar. I spent months researching the mobile bar business and looking for a trailer. I found the perfect 1962 Shasta camper that we have since renovated into a mobile bar. The Sippin’ Sidecar launched in June 2020, right in the middle of COVID, which has been both tough and rewarding. It has been difficult due to the unknowns of the event industry, including postponed events and people holding off on planning events/weddings. But it has also been eye-opening and rewarding. I have been able to see a variety of potential obstacles and have been able to prepare for them. I am excited for what the future holds, including several upcoming weddings this year and years to come!
Can you talk to us a bit about the challenges and lessons you’ve learned along the way. Looking back, would you say it’s been easy or smooth in retrospect?
A pretty obvious struggle is the COVID pandemic that everyone is experiencing. Due to The Sippin’ Sidecar being in the events industry, we have been affected greatly. Wedding and event dates change or people are uncertain on when to plan these events. It makes it more difficult to book events. The renovation of the bar trailer was another struggle. The trailer seemed to be in great condition when it was purchased, but what is expected from older trailers, there was a lot of wood rot underneath the metal siding. We ended up rebuilding the entire trailer from the bottom up so there would be a firm foundation.
Alright, so let’s switch gears a bit and talk business. What should we know?
The Sippin’ Sidecar is a mobile bar for weddings and events. We converted a 1962 Shasta camper into a mobile bar trailer that we are able to take anywhere in Florida. We pull up to your venue, bring all things needed for tasty drinks (excluding alcohol), and provide bartending services for you, your friends, and your family. Due to liquor laws in Florida, we are unable to receive a liquor license. Instead, our clients provide the alcohol and we provide all other drink-related items. Having the client provide the alcohol can actually save the client money compared to them purchasing a bar package through their venue or caterer. We help throughout the planning process and work with the client to decide what alcohol they will need and how much. Our passion at The Sippin’ Sidecar is creating signature cocktails. We work with our clients to find ingredients and flavors that they love and them customize drinks for their event or wedding. We also can create cocktails for them if they are unsure of what they want. These cocktails are a staple piece of any event. It brings people together, and we love to see reactions from our customers after tasting their beverages. We can also create mocktails for events. These are great for dry weddings, baby showers, and birthday parties since they do not contain alcohol. We love the sense of community that our bar can bring to events. We are there to provide the best experience possible for all who come in contact with The Sippin’ Sidecar.

We have several base packages, but we also can tailor packages to fit the needs of our clients. We realize that not everyone is the same, and we are here to make our clients happy. We also strive to give our clients the best experience possible from start to finish. We help with the drink planning, purchasing, and we make sure to always be available to answer questions. Planning events and weddings can be very stressful, so it is our goal that the experience with The Sippin’ Sidecar is seamless and enjoyable for everyone.
