Today we’d like to introduce you to Jennifer Bramlitt.
Jennifer, we appreciate you taking the time to share your story with us today. Where does your story begin?
We started our business in 2021. During covid we were on furlough from full-time jobs. I had always loved baking but did not usually have time with work and children schedules. Covid gave us some quiet time, I was bored and started to bake. It was too much for my family so we started sharing with local friends. Everyone seemed to like our treats, so my husband suggested that we start selling them. So in 2021 we took the leap and started our own cottage bakery, we attended craft shows with a table set up and a tent. As a cottage bakery we were allowed to work from our home kitchen and provide non-temp controlled items. We then decided we wanted to reach more people so we bought a trailer and began work on building what we needed for our particular business. We transitioned into the dessert trailer. We found a commissary that helped with all of our paperwork to get us fully licensed to work out of our trailer so that we could start selling temperature controlled foods. We were then allowed to expand our menu to include cheesecakes! We have been blessed to have customers and businesses that continue to support our small family business and we are thankful to each and every one of them.
Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
I don’t feel that any business ever has a smooth road. There are always ups and downs along the road, with food trucks especially. Season plays a role in our business so summers are usually our slow season, we had to learn to adapt from busy to slow season and make adjustments as necessary.
Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
We love sharing our southern heritage with people here (we are originally from MS). We offer cheesecake, bundt cakes, brownies, cookies, homemade ice cream. We started out as bundt cakes and cookies (these were allowed under cottage laws). When we received our food license we started baking cheesecakes. I love that we get to create new and bold flavors whenever we feel like it. Now we are more recognized for our cheesecake slices, each flavor is unique and every flavor carries it’s own recipe. We pour our heart and soul into our business, we will not put out any product that we do not love. We have strict standards on flavors, if we cannot reach our desired goal with a flavor it does not go on our menu.
Where do you see things going in the next 5-10 years?
I am uncertain about the food truck industry but I believe that the demand will stay steady within the next 5-10 years. We have to adapt to people’s behavior and what our customers are looking for. Food trucks in our area were in high demand during covid when people were not allowed to go sit in restaurants, now restaurants are back open. As a food truck, we have to set ourselves apart and offer a unique product that our customers will continue to support.
