Today we’d like to introduce you to Rima Schillinger.
Hi Rima, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
After watching family members struggle with heart disease, I learned that eating a plant based diet can help combat coronary issues. Quickly I learned that preparing flavorful & balanced plant based meals takes some learning and skill. I decided to make meals available for delivery and in 2019 launched vegetation out of a shared kitchen at Catapult in Lakeland. Since that time, we’ve moved into our own cafe & kitchen and have been serving plant based meals there since 2023.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Never having been involved in the restaurant business until vegetation, we’ve had a steep learning curve. You can name any aspect of the business and I can tell you I knew nothing about it. Thankfully we had a ton of help
along the way from Catapult.
As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I’m the owner of a cafe specializing in plant based food. I’m proud of the feedback we get from both our vegan and non-vegan customers who love our food and keep coming back. I’m proud of our dedicated staff who work so hard to bring Lakeland high quality foods made with love, from scratch. I’m proud to offer nice options for those looking to incorporate more grains, fruits and vegetables into their diets for longevity and health, as well as animal protection and environmental sustainability.
What do you like best about our city? What do you like least?
I love the diversity in Lakeland and the small town feel.
