Today we’d like to introduce you to Carolyn Presutti.
Hi Carolyn, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I left a career of 25 years to follow my dream of owning a bakery. Baking has always been a hobby of mine, but quickly turned into a passion once I realized I can do this full-time. I decided to take a huge leap and that’s when I opened my cottage bakery, simply titled, “Bread”.
Bread. went from a few loaves of sourdough each week, to 80 loaves of sourdough, 100 New York style cookies, scones, muffins, and our newest item- Neapolitan style pizzas, and we sell out each week. We also sell pancake mix along with our own house blend Italian seasoned olive oil.
We initially held pop-ups in my own neighborhood and then added local markets to our schedule. Recently, we started teaching sourdough classes at La Norma Italian Restaurant in Longboat Key and our classes have consistently sold out each week.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Our only struggle is that there are not enough hours in a day.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
One of the things that Bread. specialize in is trying to create unique flavors of sourdough each week. Being a foodie, I love seeking out different ingredients to pair that I know will compliment one another. Our customers look forward to this each week. It’s a good way to expose people into trying something they have never had before.
Bread. has created close to 50 unique sourdough flavors. Some of our flavors have included truffles, chili crisp, hot honey, espresso coffee and much more.
Do you have any advice for those just starting out?
My advice would be is to always test out your recipes first. Start off small, sell one item at a time and make sure that one item is perfect before you add more items to your menu. This business requires a lot of hours and grit so I tell people, patience is key. Great sourdough doesn’t happen in one day. It’s a process of 3 to 4 days.
