Community Highlights: Meet Remy Gratesol of Aux delices Bakery and Cafe

Today we’d like to introduce you to Remy Gratesol.

Hi Remy, we’re thrilled to have a chance to learn your story today. So, before we get into specifics, maybe you can briefly walk us through how you got to where you are today?
My name is Remy Gratesol. I am from Lyon, France. I took over Aux Delices Bakery and Cafe four years ago, which I bought from my Uncle, Andre Gratesol. He was the previous Owner for approximately 45 years.

I attended culinary school in France for 5 years and earned my diploma as a Chef and Pastry Chef.

When I took the bakery, we were doing 4 Farmers’ Markets a week, plus our bakery. Now I am doing 7 Farmers’ markets a week, doing all sales, and of course, my bakery.

We all face challenges, but looking back would you describe it as a relatively smooth road?
It wasn’t easy at all at the beginning, my first year I struggled because of Hurricane Ian.
After the Hurricane, every Farmers’ Market was closed for months, so I couldn’t sell my products like I was supposed to.
I did different events instead to try to make as much money as I needed, and it worked.

It’s been 3 years since the bakery has been doing well, and I am preparing in my head to open a new bakery in 2-3 years, way bigger, with a restaurant, deli, bar, and live music.

Aux Delices Bakery is a French Bakery. We specialize in croissants ( all sorts), Bread, and French pastry.

We are known for the quality of our products; everything is fresh and baked every night. Also, we use local products and European flour.
European flour is essential for me because so many people in the USA are “gluten-free intolerant,” but if they try my product, they are fine. This flour is not bromated or bleached, and it contains no GMOs.

I am very proud to be part of this community, Lee County. I am a sponsor of Fort Myers Film Festival, and I also make some donations to Cypress Lake High School, where my kids go. Very proud to donate my unsellable produce to the Salvation Army every Tuesday.

Is there any advice you’d like to share with our readers who might just be starting out?
be passionate and do what you have to do at 100% and it will pay.
