Today we’d like to introduce you to Darling & James Vickery.

Hi Darling & James , it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My baking business started during a season when I could not find a job. I pitched the idea of selling desserts and created a separate Instagram just to see where it could go. Back then it was called Darling’s Desserts. A friend ordered one dozen chocolate dipped cheesecakes for her son’s birthday, ordered again later, and that tiny start gave me hope.

A few months later I got married and moved to Florida, and I thought that chapter was closed. Then one of James’s cousins found the old business page, reached out, and ordered one dozen chocolate dipped cheesecakes. That one message pushed James and me to sit down and talk seriously about bringing the business back.

In 2023 we rebranded to Cake It or Leave It LLC. James suggested that we make everything completely from scratch, and that one decision shaped our entire brand. Our original plan was to focus on anything cheesecake, but after researching cottage food laws we realized we could not sell anything that needs refrigeration. So plan B came to life.

That is when stuffed cookies took over. Our first three flavors were Nutella, s’mores, and cookies n creme, and they became instant best sellers. We kept adding more flavors, building more treats, and growing our menu one recipe at a time. Today we have seven stuffed cookie flavors, six cookie cup flavors, four banana bread flavors, four rice crispy treat flavors, three personal cake flavors, one sweet stack flavor, and more coming soon.

Every event comes with the same three questions
“Did you make these”
“Are these homemade”
“Hold on… y’all baked all this”

And the answer is yes every single time.

Everything at Cake It or Leave It LLC is made from scratch right here in our home kitchen. No shortcuts. No store bought mixes. Just original recipes, late night testing, and a whole lot of determination.

I do all the baking. Every recipe, every batch, every tray, every idea that turns into a real dessert happens in my kitchen. James is the idea machine. He comes up with flavors and concepts, and I bring them to life. And at events James is the one out front talking to everyone, bringing in customers, and creating the energy while I stay behind the table, happy and introverted.

We are a cottage home based bakery operating proudly under Florida’s Cottage Food Law. If it made our menu, it is because we truly believe it is worth sharing.

I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Smooth? Not at all. Building Cake It or Leave It LLC has come with some real challenges. I bake every single thing from scratch, so there are long nights, early mornings, and plenty of moments where a recipe fails before it ever becomes a menu item. Some ingredients get expensive, some ideas take forever to perfect, and some days I feel like I’m doing ten jobs at once.

Markets are another big part of the journey. Some events are packed and we sell out back to back, and other days are so slow we barely make anything. But we still show up every single time. Rain, heat, busy, slow, good day, bad day, we keep our tent up and keep pushing.

Working under cottage food laws also means I have real limitations, so I have to constantly create and adjust my menu to stay compliant. And since I’m an introvert, I stay in the kitchen while James works the crowd, brings in customers, and keeps the energy going. It works, but it is still a lot to balance.

But the truth is, even through the hard parts, God kept giving us strength, patience, and direction. Every time we felt stuck, overwhelmed, or unsure, something always worked out exactly when we needed it. That wasn’t luck. That was God.

Nothing about this has been smooth, but every challenge shaped the business into what it is today. Every setback taught us something. And every event, slow or busy, reminds us why we started. It has not been easy, but it has absolutely been worth it.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
I am a full time home baker running Cake It or Leave It LLC, and my work centers around creating desserts that are homemade, indulgent, and completely original. I develop the recipes, bake everything from scratch, prep for markets, and keep the whole menu cottage safe. Baking is my lane, my comfort zone, and where I put most of my time and creativity.

James has his own world too. He is a full time computer technician and also runs his own computer business called Tech It or Leave It. After his regular job he works on his clients, repairs, builds, and tech calls, then on the weekends he steps in and helps me with Cake It or Leave It LLC. He comes up with new treat ideas, helps set up at events, and handles all the customer interactions because he is the social one and I am the introvert.

What I really specialize in is flavor. My stuffed cookies are our signature, but I also create cookie cups, banana breads, rice crispy treats, personal cakes, and sweet stacks that you do not usually see at local markets. Every recipe is developed from scratch and every flavor serves a purpose.

I am most proud of the fact that this business was built from pure consistency and creativity. No shortcuts. No premade mixes. No overnight success. Just real work and steady growth. Seeing customers taste something I made and immediately light up never gets old.

What sets us apart is the combination of homemade quality, unique flavors, and the teamwork behind it.
I handle the baking.
James handles the people.
And together we built something real.

If you had to, what characteristic of yours would you give the most credit to?
The quality that has pushed me the farthest is consistency. I show up even when I am tired, even when sales are slow, even when a recipe flops, and even when life gets crazy. I keep going. That steady push is what turned my little hobby into a real business.

Another huge part is patience. Baking from scratch takes time. Building a customer base takes time. Learning cottage laws, creating new flavors, setting up for markets, dealing with good days and slow days, it all takes patience. I had to learn how to stay calm, trust my process, and understand that everything grows step by step.

And honestly, creativity keeps us different. I don’t copy what everybody else is doing. I experiment, I test, I adjust, and I make flavors that reflect me. James throws ideas at me and I bring them to life in the kitchen.

But the most important characteristic is heart. I care about what I make. I care about the people who eat it. I care about showing up and doing it right. And through all of it, God gave me the strength, the clarity, and the self discipline to stay focused on my purpose. Without Him, I wouldn’t have made it this far.
