Rising Stars: Meet Greg Elliot

Today we’d like to introduce you to Greg Elliot.

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
I started working at a “fast food” type restaurant in a small town in Michigan when I was 15. I really enjoyed the money @$2/hour I made and friends coming while I worked so I could interact with them. I ended up graduating from Michigan state university with a bachelor’s degree in business specializing in hotel, restaurant and institutional management. Got a job in San Diego. Then transferred to LA, Moved to New Hampshire, Upstate NY, Long Island, S jersey, Miami, Pittsburg back to Miami and then to Tampa. Got the Brunchery in 1993. Operated three different locations. Now own the S Tampa location and G. Elliot’s Catering www.Brunchery.com & www.gelliotscatering.com

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Mostly getting and retaining quality employees is the largest struggle in the hospitality field. Nothing compares to the shutdowns of covid and the frightening daily news of incomplete information on covid.

Can you tell our readers more about what you do and what you think sets you apart from others?
I’ve been in the restaurant business for over 50 years. I’ve worked for all types of bosses and in many positions, from worker to the executive in a major corporation in charge of @46oo restaurants. I now own the small brunch restaurant where we make killer breakfasts and lunches. We make our hollandaise from scratch which is not as common today. We have some of the best burgers in town and great salads. Our waffles are so tasty. I had a client call me Sunday night at 6 pm and asked me to provide them 1000 sandwiches by 10 am and 1000 dinners by 3 pm on Monday. I said yes and then went to work, figuring out how to do that. The President of the United States was coming to Tampa for a small business presentation and The White House called on G. Elliot’s Catering. We delivered. For a kid growing up in a town of @20,000, I was in awe.

Do you have recommendations for books, apps, blogs, etc?
I like apple products and have used them starting in 1989. I read the Bible daily and enjoy love stories. The notebook was a great book and made into a movie. In corporate America I had all the ‘intelligence’ info given to me. Now I have to dig and keep informed on trends and business movements. Jesus, when asked about the greatest commandants, said love the Lord God with all your heart, mind and might and to love others. I try to do that.
