Conversations with Teresa Rodriguez

Today we’d like to introduce you to Teresa Rodriguez.

Hi Teresa, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?

I am originally from Puerto Rico. From a young age I knew I wanted to become a dietitian. It was my aunt from the city of Ponce who inspired me to pursue this career. Soon enough I started to learn the role that nutrition plays in our lives. That was 27 years ago. Now, I’m a certified Dietician in both the United States and Puerto Rico. I have decades of knowledge in preventing illnesses and combatting diseases. Then at 48-years-old my life decided to take a turn, and all that knowledge became drastically vital.

The date was May 10, 2015. I started to lose my vision due to mold toxicity. With this in mind, I decided to develop my own nutrition plan. After that personal experience, I was able to understand treatment through different lenses. Everyone is so unique, their problems are unique; therefore, their methods for recuperation should also be unique. Simply said: what may be effective for one person may not be as effective for another. So I went digging to find the root cause of many diseases.

On November 2015, I learned about the Functional Nutrition approach. For example: exposure to environmental toxins can cause lifestyle changes, like genetic modification or alteration. It’s a way of assessing nutritional therapy. I understood the whole picture and our roles in it. For me, that’s providing personal guidelines. So I decided to start my own company in July of 2017. Curious Mind RD. And since, I continue to offer extensive counseling, particularly in ketogenic therapies.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It’s a cliché, but life is full of ups and downs. One minute you’re the proudest parent ever of a UF scholar; and in the next minute, you’re teen is diagnosed with an abnormal eye disorder involving blood vessels inside the retina. I had to seek the best for my child. So, I applied my knowledge through the viewpoint of integral nutrition, in his case: genetics. That was the key to recovery. Today, he continues treatment in both conventional medicine and nutrition. Sometimes you’re down then you’re up too.

Thanks for sharing that. So, maybe next you can tell us a bit more about your work?
I have been on my personalized ketogenic therapy for six years now. After my personal experience, implementing functional nutrition for my clients has helped me change so many lives. I am an experienced Advanced Practice Registered Dietitian with training as a specialist in: *Renal nutrition, *Mitochondrial health, *Ketogenic approach, *Identifying adverse food reactions, with emphasis on food sensitivities as part of Integrative and Functional Nutrition.

I coach my clients and their families through the safe and effective use of nutrition therapies and protocols for metabolic and auto-immune diseases as well as neurological disorders. Symptoms can include muscle weakness, diabetes, hearing and vision loss, kidney failure, heart disorder, and dementia. Mutations caused by the environment are generally confined to specific organ regions and buildup over time, leading to certain forms of cancer and an increased risk of age-related disorders, such as heart disease, Alzheimer’s disorder, and Parkinson’s disorder.

Curious Mind RD is a nutrition therapy counseling via virtual practice focusing especially on the various types of ketogenic nutrition therapies that will allow you to get into ketosis including: *Classic ketogenic diets, *Modified ketogenic diets, *Medium-chain triglycerides (MCT) oil, *Modified Atkins, *Low glycemic index therapy, *Intermittent Fasting approach.

My primary goal is to empower individuals with the knowledge to follow nutrition therapy to help control their disease and positively impact their quality of life.

Where do you see things going in the next 5-10 years?

What matters most is my relationship with God, family, and friends. All three have inspired me to succeed. I am determined to guide others in ways that will improve their quality of life. I have even implemented specific therapies and nutritional practices for own family, so they can achieve the goals they want and feel better. Together through education we can achieve. It’s my reason for sharing this information with others via all social media platforms.

Within Curious Mind RD, we formed Keto Dietitians Puerto Rico. We are dedicated to providing general education about the ketogenic therapies and its benefits. I also created two private groups focused more on transformation, such as Keto for Hispanic Women. Another one of my studies is Keto for Polycystic Kidneys. Incredibly, just 2 years ago the only therapies given for Polycystic Kidney Disease (PKD) were dialysis or transplantation. Today we know that the implementation of a ketogenic diet could prevent the progression of this genetic condition.
