We recently had the chance to connect with Kimberly Platt and have shared our conversation below.

Good morning Kimberly, it’s such a great way to kick off the day – I think our readers will love hearing your stories, experiences and about how you think about life and work. Let’s jump right in? What’s the most surprising thing you’ve learned about your customers?
That so many of them have visited Hawaii.

Can you briefly introduce yourself and share what makes you or your brand unique?
My name is Kimberly Platt and I am the Co-owner of the Honu Restaurant and Tiki bar in Downtown Dunedin. We are a traditional Polynesian tiki bar restaurant and take pride in honoring Hawaiian tradition and Tiki History. In Feb 2026 we will be celebrating our 10 year anniversary and it will be a great party!

Okay, so here’s a deep one: What’s a moment that really shaped how you see the world?
My cousin’s funeral literally just last week. He almost died 21 years ago, and his unfortunate passing taught many of our family what is important and how to be happy and kind. I think everyone needs a reminder of that.

Was there ever a time you almost gave up?
Lots! Staff issues is something that really strikes a nerve with us as we are always the bad guy no matter what the facts are.

Next, maybe we can discuss some of your foundational philosophies and views? What’s a belief you used to hold tightly but now think was naive or wrong?
That people believe in each other.

Before we go, we’d love to hear your thoughts on some longer-run, legacy type questions. What do you think people will most misunderstand about your legacy?
That we made decisions based on business needs not our personal agenda.
